Packing a nutritious punch 😋

A great way to eat patè or you could even use sausage meat if you like. These are also good as a ravioli substitute with a homemade tomato or bolognese sauce.

To make the filling (patè);

Fry 4-5 slices of bacon in a butter laden pan until crispy. Add these to a blender/food processor whilst you cook your liver.

In the same pan cook 1/2lb of liver chopped into thumb size pieces. Fry until medium rare and add more butter if needed.

Once you are happy add them to the blender along with 25g of butter, 75ml of double cream and a slosh of apple cider vinegar.

Blend the lot together, pop it in a jar and refrigerate for use throughout the week.

To make the parcels;

Use 8 even sized edam cheese slices or cut to desired size (smaller work better if using in sauce). Lay them onto baking paper on tray.

Egg wash all the slices before placing your filling in the middle and then just place one on top of the other to make 4 parcels.

Cook in oven at 200⁰ until golden, take them out, off the tray and then let them cool fully before trying to remove from the baking paper. Sprinkle with some Pluck and enjoy.
