Boil or steam florets from one large or two small cauliflowers. (Sweet potato works really well instead of Cauli for a great glycogen top up).

Fry one chopped red onion and three crushed garlic gloves in butter. Once starting to golden, add a bit more butter then add fish of choice, add your herbs of choice, thyme, rosemary or parsley go well.

(Fish diced/chopped - a whole side of salmon, three-four smoked fillets of basa/haddock are great, some prawns. Or even a mix of all).

Whisk together 5 large eggs, 150ml of double cream and 120g of cream cheese.

Once the fish is about cooked turn off the heat and pour in the creamy mix.

Drain and mash the cooked cauliflower/sweet potato, add plenty of butter (don't be shy) then add in the fish mix and continue to mash and stir the whole lot together. (You may need to transfer to a bigger pan or bowl to do this in).

At this point you can add and mix in any extras you fancy like garden peas or asparagus tips, but no essential.

Place the new mix into an oven proof dish, top with lots of grated cheese and bake 180 degrees C for 30-40mins.

Sauce will be more liquid straight out of the oven and will thicken if left to cool.
