When the weather finally warms up a bit āļø
Let's make ice cream š
Forget all the sugary versions you can buy, make your own. It's easy and sooooo much tastier š
Four large or six medium egg whites, whisk the whites to soft peaks. As it begins to get thicker add a very small splash (1/4 teaspoon) of apple cider vinegar or lemon juice.
In another larger bowl whisk 300ml of double cream until soft peaks appear. Then mix in 50g of powdered stevia/erythritol or a tablespoon of raw honey.
Gently fold the egg mixture from the other bowl into the cream, (also at this point fold in any extras, like berries, cacao powder, more lemon or some vanilla extract for particular flavours) then pour into a lined or rubber loaf tin.Ā
Freeze for 2-3hrs for soft ice cream.
It helps to take it out of freezer 10mins before you want it, & before attempting to scoop it out when in freezer longer than 4+hrs.
Don't eat too much all at once.
